I talk a lot about the health benefits of a plant-based diet and how it can profoundly change your health - and life. Often, what gets lost in that conversation is the practical reality of it. If you haven’t made the switch, it can be challenging to imagine what a day of meals would look like. Salad and oatmeal forever doesn’t sound fun or interesting!
Luckily for you, I just wrote a fun piece for Healthline here about the kinds of foods I eat in a week. As you can tell, there’s abundant variety in my diet, and just a little creativity can take a few ingredients a long way. Think chana masala, beet burgers, burritos, tofu scrambles, and a mile-high pile of fruit. Don’t forget your greens!
